栄養士業務の基本的作業である献立作成には,食品重量の把握が不可欠であり,実際の重量や容積を,目安重量(目測量)から出来るだけ正確に把握しなければならない。したがって調理学実習,給食管理,臨床栄養学実習,栄養学実習および栄養指導実習などの授業で,食品重量を出来るだけ正確に目測する教育が行われている。この度,献立作成や食事調査方法を学習した本学の学生41名を対象に食事調査から,「食品目安重量」の学習効果の程度について検討した。記述式の食事調査と平行して,各食事の写真を撮影し,写真から推定した検者らの食品目安重量(以下検者目安重量)と,被検者らの食品目安重量(以下被検者目安重量)と比較し,学習効果の尺度とした。その結果,野菜類などは比較的重量が把握できているが,形態の違いや水分含量によって把握しにくい食品があることが明らかとなった。また,授業などで1個当りの目安重量(常用重量)として学習した食品については,実重量を無視して,常用重量を用いる傾向がうかがわれた。","subitem_description_type":"Abstract"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"神戸女子短期大学学会"}]},"item_10002_source_id_11":{"attribute_name":"書誌レコードID","attribute_value_mlt":[{"subitem_source_identifier":"AN10471612","subitem_source_identifier_type":"NCID"}]},"item_10002_source_id_9":{"attribute_name":"ISSN","attribute_value_mlt":[{"subitem_source_identifier":"09193650","subitem_source_identifier_type":"ISSN"}]},"item_creator":{"attribute_name":"著者","attribute_type":"creator","attribute_value_mlt":[{"creatorNames":[{"creatorName":"中村,
