University","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"目的:食物アレルギー児のための牛乳に代わる「飲み物としての代替食」を作成することを目的とした。\n方法:保育所の3-5歳児を対象とした。献立作成に当たっては,牛乳の代替食中のカルシウムとビタミンB2含有量が牛乳のそれらの値に等しくなることを目指した。食材としては牛乳・乳製品に加えて,アレルギー原因食物となる鶏卵,小麦,ソバ,ピーナッツ,大豆,ゴマ,ナッツ類,甲殻類,軟体類・貝類,魚卵,肉類,果実類は使用しないこととした。但し,保育所児童の味覚に合うという観点や飲みやすさなどを考慮すれば,代替食では果実類を用いざるを得ない。そこで,我々の過去の調査結果より除去すべき果実類は,バナナ,キウイ,メロン,パインナップル,梨,マンゴー,パパイアのみとし,これら以外は使用可とした。\n結果:最終的に8種類の代替食を提案した。カルシウム量については牛乳の68~85%(平均76%),ビタミンB2量は20~27%(平均21%)しか補えなかった。\n結論:牛乳の代わりとなる飲み物としての代替食の作成は困難である。それ故,牛乳・乳製品アレルギー児に対しては,飲み物以外の食事から不足している栄養素を摂取できる給食献立が望ましい。","subitem_description_type":"Abstract"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"神戸女子大学"}]},"item_10002_source_id_11":{"attribute_name":"書誌レコードID","attribute_value_mlt":[{"subitem_source_identifier":"AA12385305","subitem_source_identifier_type":"NCID"}]},"item_10002_source_id_9":{"attribute_name":"ISSN","attribute_value_mlt":[{"subitem_source_identifier":"18836143","subitem_source_identifier_type":"ISSN"}]},"item_10002_version_type_20":{"attribute_name":"著者版フラグ","attribute_value_mlt":[{"subitem_version_resource":"http://purl.org/coar/version/c_970fb48d4fbd8a85","subitem_version_type":"VoR"}]},"item_creator":{"attribute_name":"著者","attribute_type":"creator","attribute_value_mlt":[{"creatorNames":[{"creatorName":"佐藤,
