現在,わが国では高齢者の単独世帯が増加している。こうした一人暮らしの高齢者の食生活について,経済的,嗜好的両面ともに満足ができ,栄養面についても考慮するために,地域福祉としてのサービスなどの活動が必要とされる。だが,高齢者福祉に携わる人員が少ないと言うのが現状である。そこで,給食サービスや宅配給食サービスに適当な価格で,しかも内容の充実した調理済み食品を利用することができれば,少数の人員で行われるのではないかと考え検討することにした。しかし,この度の大震災により,各地で行われていた高齢者のための給食サービスが中断され,避難所において行政の宅配給食サービスが行われた。避難所では,パン,おにぎり,カップラーメン,弁当などの宅配給食が多く,栄養的にも,嗜好的にも問題が生じているようであった。特に,宅配給食の対象者が多数のためか高齢者,慢性疾患をかかえている人等に対する配慮が困難であった。今,自助努力が多く言及されているが,一番の力となることは互助であり,そこに心のかよう公助があって安全が確保されると思われる。","subitem_description_type":"Abstract"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"神戸女子短期大学学会"}]},"item_10002_source_id_11":{"attribute_name":"書誌レコードID","attribute_value_mlt":[{"subitem_source_identifier":"AN10471612","subitem_source_identifier_type":"NCID"}]},"item_10002_source_id_9":{"attribute_name":"ISSN","attribute_value_mlt":[{"subitem_source_identifier":"09193650","subitem_source_identifier_type":"ISSN"}]},"item_creator":{"attribute_name":"著者","attribute_type":"creator","attribute_value_mlt":[{"creatorNames":[{"creatorName":"松浦,
